Disney’s Caribbean Beach Resort has been undergoing lots of construction. If you have been there in the past couple of years you know what I’m talking about; there was no avoiding the construction. Part of the construction included a new restaurant, Sebastian’s Bistro.
This new restaurant is located along the Old Port Royale promenade at Caribbean Beach. With waterfront views and tropical vibes, it sounds like Sebastian’s Bistro is going to be a nice place to grab a bite for lunch or dinner.
Reservations are now open and starting October 8, guests can try this new table service restaurant. The menu includes items that blend Latin and Caribbean flavors. Included on the menu are things like salads, sandwiches, burgers, seafood, and steaks. Lunch runs from 11 a.m. to 3:55 p.m. and dinner runs from 4 p.m. to 10 p.m.
Menu Items Include
- Caribbean Pull-Apart Rolls – Served with guava butter, mango chutney, and Jamaican jerk oil.
- Jamaican Meat Pies – Served with Guajillo chili sauce.
- Arepa – Slow cooked pork and chili-mango barbecue sauce
- Skirt Steak “Chimichurri” – Served with crispy yuca.
- Citrus-Stuffed Sustainable Whole Fish – Served with turmeric brown rice and cilantro-lime vinaigrette.
- Sauteed Shrimp and Tamales – Served with sauteed peppers and salsa verde.
- Crab Cake-topped Burger – Served with lettuce, tomato, and horseradish mayonnaise.
- Crispy Avocado Bacon Burger – Served with chimichurri and pico de gallo.
- Island Curry “Eggless” Sandwich – Served on multigrain bread. (Vegan)
- Plant-Based Bahn Mi Sandwich – Served with cucumbers, pickled vegetables, and Miso-Sriracha mayonnaise. (Vegan)
- Mile Marker Zero – Iced Key Lime Pops with sea salt and tropical sauce. (Dessert)
- Banoffee Pie – Banana Custard and chocolate ganache served in a graham cracker tart with caramel sauce.
- Floating Island Sundae – Fresh Caribbean fruit, meringue, guava, and Guanabana sorbet.

I think this is such a cute theme and I’m glad that one of the restaurants has a Disney character theme to it. The Little Mermaid was a perfect Disney movie to use for the theme and I can’t wait to see all the decorations.
