It’s been a while since I have done a recipe post. My daughter loves cake pops and I thought it would be fun to make our own in the shape of Mickey (of course).
They were fun to make, but I do have one suggestion…don’t use cake mix that has pudding in it. I didn’t realize I had picked up one with powdered pudding included in the packet and I think they would have been easier to mold if it was a regular cake mix, or a made from scratch cake.
Here is what you will need:
- Cake, any flavor (mix or from scratch)
- Icing (to help mold the cake)
- Melting chocolate
- Red sugar or sprinkles
- Cake pop sticks
- Baking pan
- Wax paper
Recipe:
Make the cake, either from a mix or from scratch. Once the cake is done, let it cool. After it has cooled, cut it into big pieces and put the pieces into a large bowl. You can either break apart the cake with your hands or a fork, but try to get the pieces pretty small.
Next, take about 1/2 a can of frosting and mix it with the cake pieces. If it is still crumbly, add more frosting (a little at a time) until it is a good molding consistency.
Now you can line your baking pan with wax paper. Start molding the cake/icing mixture into balls and place them on the lined baking sheet.
Once you have the molded mixture on the baking sheet, you can start melting the chocolate. I cheated this time and just bought a microwavable container with the melting chocolate. It tastes good, so that’s all that matters! Once the chocolate is melted you can start coating the cake molds. After the molds are coated you can put the cake pop sticks in and put a little extra chocolate around the sticks to act like a glue, keeping the cake pop on the stick.
Next I put the cake pops in the fridge to harden the chocolate. The melting chocolate I used said 15 minutes, but I left it in longer, just to make sure. After the chocolate had hardened it was time to make the ears! So I balled up smaller amounts of the mixture, put them on cake pops and coated with melting chocolate. This works as a glue to keep the ears on the already hardened chocolate.
Then I put chocolate on the bottom half of the cake pops and sprinkled the red sugar over the cake pop. The sugar stuck to the chocolate, but I think next time I will try sprinkles. I didn’t quite get the look I wanted, but it does taste good.
After I was done coating the ears and sprinkling the sugar, I put the pan back in the refrigerator for 20 minutes or so. When they came out, I was able to peel them right off the wax paper. The ears were secured on top of the original cake pop, so that made me happy!
I definitely want to make these again. They were really easy to make and I think using a from scratch or cake mix with no pudding would make it easier to actually dunk them in the melting chocolate. Guess I’ll just have to make another batch and find out!
